I Said A Bad Word

I said a bad word the other day and Mark completely FREAKED OUT! .......the word was 'vegetarian' and the sentence I used it in was something like....."I think I want to start eating a vegetarian diet".
I might have well said I wanted to shoot hard drugs into myself as well as the children......it didn't go over well.
(A strange rookie mistake, if I know nothing else about Mark, I know being too direct gets me nowhere......he's very comfortable in battle mode.)

What I should have done is kept that little detail (the word) to myself and then just subtly proceeded to make delicious meals all week that happened to contain no meat...........lesson learned.

My copy of the Mediterranean Chicken Pizza (I was sneaky and left off the chicken...you'll never miss it)

Pillsbury Pizza crust
Herb & Garlic blend (minced garlic)
2 TBS Olive oil
8 sliced sun dried tomatoes
1/2 cup feta cheese
1 cup mozzarella cheese
2 cups fresh baby spinach

Roll pizza dough onto a lightly greased cookie sheet and spread the combined olive oil and minced garlic blend over the dough. Sprinkle with feta and sun dried tomatoes. Bake for ten minutes, then add the spinach and mozzarella, bake for an additional eight minutes. Super Easy!

If you don't have pizza dough, garlic bread or toast works great too.


It's a crazy tasty snack or meal.

I know cheese is iffy when talking about a vegetarian diet.....but I think cheese should be defined as a food group unto itself. Not dairy.... I have no problem giving up milk, yogurt, ice cream......but cheese? I just couldn't do it!

You can eat cheese if you're a vegetarian, you can't if you're vegan. I don't know how vegans do it. I've been a vegetarian for 8 years now, and I'm never giving up cheese! BTW, your pizza looks yummy!

That pizza looks yummy!! I have been a vegetarian for almost 3 years now!! I tried to go vegan, but NO WAY!! I was a true meat lover! It took me seeing a website, that if you want to know it I will tell you, to make me stop eating meat! Sometimes I think I'm gonna eat meat, but I just can't bring myself to do it! I still make meat for my family. Marc tells me I should make more vegetarian meals for the whole family, so I am glad I have that support! Good luck girl!! Why were you thinking of going veg?

I have to say that Brian would lose his mind without meat or if I even suggested it! I think I could be fine without it! Good luck with Mark on that. But he doesn't have to stop eating meat even if you do!

I guess I always thought that vegetarian was just no meat, be VEGAN was no animal byproducts, like cheese is ok in vegetarian diets but NOT ok in Vegan ones.......anyway, your pictures are looking GREAT!

We're about 90% vegetarian--we eat fish. We also limit dairy products--do lots of calcium fortified O.J. though. We LOVE the Moosewood Simple Suppers Cookbook.

Honestly, I would be disowned if I gave up meat. Too many hunters and fishers in my family. Plus, I would miss my chicken pot pie, pepperoni pizza, homemade hamburgers and crock pot roasts! More power to you and all the other vegetarians though. Also... NO MILK??? How could you?!! I thrive on milk... but you'll do just fine in Japan. They don't really depend on that too much. The biggest cartons they sell are half gallon, and that's only on base! By the way, when do you guys move? I keep picking out "friends" for you in the branch!
