It's Good That He's Away

The only good thing about Mark's long duty stretches is the garlic. Lots of gaaaarlic. I love chips and salsa for lunch and dinner....a little salsa with my garlic. You could call this my twenty paces recipe because you really wouldn't want to be within twenty feet of me....but when Mark is away.... I can indulge.
Once upon a time I had a written recipe for this, but now it's down to memory and mood. It goes a little something like this:
In a food processor, chop:
1/2 bunch fresh Cilantro
4 cloves fresh garlic
1/4 cup red onion
1 can diced tomatoes
1 can Rotel tomatoes (Original)
1 Tsp Salt (to taste)
1 TBS Lemon or Lime juice

It's ridiculously addictive and delicious. If you have a solitary
day (or two) give it a whirl.

Looks yummy!! I love salsa! I really love to make my own, but my recipe is a lot harder and more time consuming than this one! So the best one I can find is at Costco! It is sold with a bean dip attached to it next to the rolling chickens (as my girls call them, HAHA)!
